HUTSPOT MET KLAPSTUK

Hutspot and Klaptuk are Dutch traditional cuisines. It has an interesting story behind. In 3rd October,1574 the city of Leiden gained victory over the Spanish invaders. Leiden citizens gathered to celebrate with the large amount of white bread and a colorful mashed potato,carots and onion dish known as Hutspot.

Hutspot is genereally served with Klapstuk, a piece of braised beef.

Lets try South Holland favorite food !

 

 


INGREDIENTS

  • 1 Tbsp butter
  • 450 g onions, peeled and sliced
  • 2.25 kg potatoes, peele and sliced
  • 1.5 kg carrots, peeled and sliced
  • 1 kg beef rib
  • 1 litre chicken stock
  • 1 bay leaf
  • 7 peppercorns,whole
  • Salt and pepper

 

PREPARATION

In a large pot, heat the stock. Add the beef,bay leaf, peppercorns and cook for approximately 1 hour or until beef is tender.
Add carrots to the pot and gradually potatoes. Cook for 35 mins over low heat and add stock if necessary.
Remove the meat to a container once the vegetables are cooked.
Mash the potatoes,carrots,onion to achieve a neutral consistency. Add a little stock for smooth texture.
Adjust with salt and pepper to taste.
Slice the Klapstuk thinly and serve it with the Hutspot on a large platter. Serve with the gravy.

Get the whole family to help  peel and chop the vegetables as it requires a considerable amount of preparation time. This recipes serves 8 people.
